Mango Chipotle Soup

1 mango
1 tsp. chipotle powder
¼ tsp. salt
1 tsp. freshly ground ginger
1/2 cups of water
1 tbsp. freshly chopped mint leaves
A sprinkle of chipotle powder for presentation per bowl
A sprig of mint for presentation per bowl

Peel and de-seed the mango and place in a blender.
Grate the ginger into the blender.
Add the chipotle powder to the blender.
Add the mint to the blender.
Add the water to the blender.
Blend until smooth.

Farmers’ markets and co-ops are usually the best places to get the freshest fruit, so look there for the mango. Fresh mint (do not use dried) can most easily be gotten in most super-markets as well as the ginger. In the Southwest, chipotle powder can be found in most grocery stores. In other parts of the country, you may have to look in specialty stores or gourmet markets.

How It Works

This dish is full of refreshing ingredients. The mango is rich and sweet while the mint has a spring-time green feel to it. The ginger blends well with the body of the soup and gives it a bit of bite while the chipotle powder really jumps out at you, but remains balance by the sweetness of the soup.

Chef’s Notes

The easiest way to peel a mango is to slice lengthways down both sides of the seed. Run the knife gently along the flesh of the mango, cutting it into cubes. Push the sides and flesh inside out and scrape the mango cubes out with a spoon. With the inner disc left over, run the knife along the skin and once it’s de-skinned, cut the remaining part off of the seed.

When choosing the mango, make sure it is very ripe. Otherwise, the mango will not be sweet enough for the soup.

I find that other chili powders don’t work as well with this recipe as they don’t carry quite the smokiness of the chipotle powder.
